Oh, pickle ice cream. You have not been an easy one to conquer. I tried simmering cream with herbs, tried adding just the brine (good, but not as fun), and finally tried simply adding very finely minced pickles at the end of the churning process.
Plenty of sweet, creamy ice cream flavor with a tangy tart bite from those pickles. We’ve shared this ice cream with so many people now! It’s a hard one to describe and about half the people kept tasting it to decide if it’s a love or a hate thing for them.
My friend and I decided the ice cream was a win and that the chewy little pickle bits were so unexpectedly fun at the end of each bite. Would we eat this every week? Probably not, but live a little and have some fun in the form of pickle ice cream!

Pickle Flavored Ice Cream
To make today’s fun-loving pickle dessert, you’ll need the following ingredients:
- heavy cream
- whole milk
- sugar
- vanilla extract
- dried dill weed
- dill pickles or minced dill pickle relish
If you decide to mince your own dill pickles instead of buying ready made minced dill pickle relish, please take care to mince it quite finely. You don’t want to bite into a rock solid pickle chunk in your ice cream!
Pickles and Ice Cream
Whisk together the cream, milk, sugar, vanilla, and dried dill. Pour the mixture into the ice cream maker and churn according to the manufacturer’s instructions.
When the mixture is almost done churning, add the finely minced pickles. Transfer to an airtight container and place in the freezer until ready to serve.
